Crispy sweet sticky spicy wings

Ingredienser til vingene:

  • 1,3 kg kyllingvinger
  • 2 kopper mel
  • 2 ts fersk revet muskatnøtt
  • 1 ts cayenne pepper
  • 4 ts hav salt
  • 1 ts svart pepper
  • 3 ss ingefær
  • 2 egg
  • 4 ss melk

Ingredienser til saus:

  • 1 finhakket hvitløkfedd
  • 2 ts olivenolje
  • ⅔ kopp honning
  • 2 ts chili pasta (eller bruk hakkede friske chili) (tilpass til smak)
  • ½ ts svart pepper
  • ¼ ts salt

Slik forbereder du kyllingvingene:

  1. Tin kyllingvingene og tørk de med papirhåndklær.
  2. Bland sammen mel, muskatnøtt, cayenne pepper, hav salt, sort pepper og ingefær.
  3.  Vispe egg og melk sammen. Dyp vingene først i eggeblandingen, deretter  i melblandingen og slipp dem i en frityrkoker i ca 8-10 minutter eller litt lengre for større vinger, til de er gyldenbrune.
  4. Legg de ferdig kyllingvingene i ei langpanne og forvarm ovnen til 175 C hvis du lager mer enn ett parti.

Slik lager du saus til vingene:

Ha olje og hvitløk i en liten gryte. Stek over middels varme til hvitløk er myk, men ikke brunet. Tilsett de resterende ingrediensene og kok i ca 5-10 minutter. Ha alle de ferdige vingene over i en stor bolle, og hell over sausen og bland godt. Du kan også bare servere sausen som en dipping saus hvis du foretrekker det.

For the Wings
  • 3 pounds chicken wings
  • 2 cups flour
  • 2 teaspoons freshly grated nutmeg
  • 1 tsp cayenne pepper
  • 3 tsp Chinese five spice powder
  • 4 tsp sea salt
  • 1 tsp freshly ground black pepper
  • 3 tbsp ground ginger
  • 2 eggs
  • 4 tbsp milk
For the Glaze
  • 1 finely minced garlic clove
  • 2 tsp olive oil
  • ⅔ cup honey
  • 2 tsp Chinese crushed chili paste (or use chopped fresh chilies) (adjust to taste)
  • ½ tsp freshly ground black pepper
  • ¼ tsp salt
Instructions
To Prepare the Wings
  1. Wash, trim excess skin and fat and cut the wings into pieces, discarding the tips. Pat dry with paper towels.
  2. Mix together the flour, nutmeg, cayenne pepper, five spice powder, sea salt, black pepper and ground ginger.
  3. Prepare an egg wash by whisking together the eggs and milk.
  4. Dredge the egg washed wings in the flour mixture and drop them in a canola oil filled and preheated 350 degree F deep fryer for about 8-10 minutes or little longer for larger wings, until a medium golden brown.
  5. Drain on a wire rack placed on a cookie sheet. Hold in a 175 degree oven if making more than one batch.
To Prepare the Glaze
  1. Add the oil and garlic to a small saucepan.
  2. Saute over medium heat until the garlic is softened but not browned.
  3. Add the remaining ingredients and simmer for about 5-10 minutes.
  4. Pour over all the cooked wings in a large bowl and toss well to cover the wings in the glaze before serving.
  5. You can also just serve the glaze as a dipping sauce if you prefer.
